Mixed Vegetable Soup


Ingredients:-
1/2 carrot
1 potato
1 Onion
3-4 pods of garlic
1 tomato
1/4 cup of cauliflower
1/4 cup of cabbage
1/4 cup bottle gourd (lauki)
3-4 leaves of spinach (palak)
salt to taste
1/2 tsp of butter
a pinch of black pepper

Cut all vegetables into small pieces. Pressure cook them altogether along with salt and water. (Water should be added enough so that the vegetables are soaked) Pressure cook for 3-4 whistles. When cool, put the vegetables in the blender along with the stock and make a puree. Boil the puree in an open vessel.(add water according to desired consistency, if the soup is thick) When boiled, add butter and black pepper pdr. Check seasoning.
This soup is a good option for children up to 7-8 yrs. as children usually give a hard time eating vegetables.
